Our WINES
There are 6 Sublime wines that can be enjoyed at the hotel (in the restaurants or in the comfort of your villa) or back at home (shipping within Europe can be arranged). Red, White, Rose, Sparkling and of course Moscatel. There is something for all tastes. The Sublime wines produced locally are wines of Atlantic influence, both rustic and strong, waiting to accompany a good meal.
SUBLIME GIN
Taking inspiration from the "farm-to-table" concept at our Food Circle and studying the oldest and most authentic techniques for producing Geneva and Gin, we selected various botanical elements from our Organic Garden to create our version of this distillate that not only represents Sublime Comporta, but also the scents and flavors found in the Alentejo region. Our Sublime Gin is undoubtedly a wine Gin, ever so rich, ever so aromatic, ever so full-bodied and a true Organic Experience.
OUR OLIVE OIL
If a good wine is essential to accompany a Portuguese meal, the same can be said of a great olive oil, in fact it’s an integral part of the typical Portuguese cuisine.
Conscious of its importance, we felt the need to provoke the palate of those who visit us by developing our own high quality olive oil, Sublime Vintage 2017. Both intense and complex, one senses the aromas of tomato leaf, fresh herbs and green apple in the nose, on the palate, it is slightly sweet, with a subtle spice which adds complexity and persistence.
